Here is a recipe for coleslaw that I adapted for our needs.
1 small head green cabbage, shredded 2 carrots, shredded 1 onion, grated 2 TBS chopped mint 1 TBS caraway seeds 2 TBS lemon juice 1/8 tsp stevia Mix all the above ingredients together. Add as much of the zuchinni/tahini dip as needed to get the consistency you like. Zuchinni / Tahini dip 2 medium zuchinni, peeled and chopped 1 cup raw tahini 1/2 cup lemon juice 1/4 cup olive oil 4 cloves garlic, peeled and crushed 2 tsps sea salt 1 tsp cumin Process all the above ingredients in a food processor until smooth. Use in place of mayo in the coleslaw recipe above or as a substitute for mayo on sandwiches. I also use it as a salad dressing or dip for raw veggies. This message has been edited.
