Measurements are a rough estimate.

2 cups raw spinach (I use baby spinach)
1/3 cup *walnuts, although I imagine *brazil nuts or any kind of especially buttery tasting nut would be good.
2 TBS ghee
2-4 TBS olive oil
2-5 cloves of garlic, depending how much you like garlic and how big your cloves are
1/2-1 tsp thyme
salt to taste
squirt of lemon juice to taste (about 1-2 TBS)

I puree this in a blender and then smother my spiral rice pasta with this stuff. I think it's best added to just cooked pasta to 'wake up' the garlic. I used to make this with parmesan and then sprinkled with goat's cheese.


TLC: Macadamia nuts or pine nuts would be less prone to mould.
