these brownies are made with spelt flour but feel free to substitute.

1 cup finely shredded zuccini
1/4 cup oil
1 egg

1/2 cup spelt flour
1/2 cup rice flour
2-3 tbls carob [ if tolerated ,adding a tsp of organic cocoa makes it more chocolatey]
1/2 tsp salt
1 tsp cinnamon
1 tsp baking soda
1/2 tbls stevia-chicolin mix

lightly beat the egg, then add oil and zuccini and mix

mix dry ingredients together well then stir wet and dry ingredients together.
scrape into oiled 9x9 inch pan and bake at 350 for about 25 minutes.

they will keep well in the fridge for a few days. they are fairly sweet so you might want to use slightly less stevia mix.

Hi Dami,
You live in Yellowknife. Cool. Just wondering, are there many health stores around there? I've never been to that part of Canada before. How does it compare to Ontario or the Prairies? I'm curious :0)

Yellowknife is a bit similar to northern ontario, lots of lakes ,rocks and small trees.the city itself is a young and friendly place but unfortunately we do not have an actual healthfoodstore. The co-op carries a number of organic foods and there are a couple of places to get herbal supplements.Since starting on the diet I have ordered a few things every month or so from Grande Prairie. Hi, I also have celiac disease and can't use the spelt flour because it contains gluten. What would be a good substitute?

I reckon that maize flour or quinoa flour would work well taste wise- but of course this is a limit recipie. I f I was making it I would not use any sweetners or carob- the rest of the ingredients should be more than sweet enough.

I used to make a gluten free cornbread with buckwheat flour, fine and medium coarse (grainy/polenta) maize flour, to which I often added either zuchinni and/or sweetcorn Kernels. The sweetcorn would probsably make this to sweet for you now Karren, but maybe you would like to try it when you are better.

It was like the above except that sometimes I used either buttermilk, goats milk or soyamilk as the liquid to bind and I usually used two egg yolks (Keep the whites for my nutty meringues!!)

P.S. If you have no gluten free baking powder, a 50:50 bextartar and bread soda (sodium bicarbonate mix) works just as well. Happy cooking.

I would probably try substituting the spelt with buckwheat but mostly because I find that the quinoa flour has a strong taste in baking. Did you try making them yet?

I made the brownies with buckwheat flour in place of spelt and they are good. I did have to bake it in an 8"x8" pan so the batter would fit. I also added more stevia and chicolin, I like them sweeter. And next time I will add a bit more zuchini or oil so they will be moister.

I'm glad the brownies turned out with the buckwheat flour. the first time I tried making them I atually used about double the amount of zuccini! they were good but more like pudding.

bouncepink Ok, I tried this recipe and modified it a bit. No carob, it makes my heart race and my hands go to sleep, other things too numerous to list. So used unsweetend chocolate. I used half the amount of brown rice flour and 1/2 oat for the other 1/2. They turned out very tasty. Oh, I added nuts too. Now the only thing was that Rice flour always seems to come out grainy or more crumbly when baking.Is there a way to make brownies more chewy? Any ideas??? These were very,very tasty though. I made a version of Frosting also,using butter, melted chocolate,vanila,tapioca,garbonzo bean flour and glycern, and the chicolin/stevia mix. That turns out more like any I tried as of yet. Thanks Dami for the brownie recipe, I have tried three now and one version was so bad they all went into the trash,Loved yours. wiggle

I modified this recipe a bit and it turned out very, very good, more like a moist choc cake thought.

I used 1 1/2 C. of shredded zucchini and added 1/2 + 1 oz. of oil. I also baked them in an 8 x 8 pan, I think it helped to keep them from drying out. I shortened the baking time by 3 -4 minutes.

Icing:
1/4 C. butter
1 oz. square unsweetened baking choc.
1 T. Vegetable glycerine
1/4 t. stevia/chicolin

I know, NOT something we should eat everyday, BUT it was my birthday Cool I think the party carob frosting posted in this section would be healthier. Enjoy banana

Happy Birthday Wendy!!!!
