Hi everyone! I'm new here, but thought I'd post what I had for breakfast this morning. Your recipes are great!
Eggplant French Toast
1 small eggplant 2 eggs 1 T cinnamon 1/8 t nutmeg 1/16 t Stevia
Cut top and bottom stem from eggplant and cut the eggplant in half length-wise. Taking each half, cut long, strips of eggplant, as thin as possible so the eggplant will cook when you fry it. Cut the eggplant like you would if you were making eggplant parmigiana.
In pie plate or other large, flat surfaced bowl, mix eggs, cinnamon, nutmeg and Stevia. Dip eggplant slices in and let soak a couple minutes while the frying pan heats up. Cook 2-3 minutes on each side until golden brown and eggplant is not quite so stiff. You can fry this in ghee, or olive oil, but I used a casein free, trans fatty acid=free spread that I happened to have.
I ate this plain, but it would be delicious with the candida free syrup recipe I saw on here. Tastes almost like the real thing!

Melanie, I acually had an eggplant that needed to be used so tonight I tried this! it does turn out like french toast.Pretty cool! I tried to modify the syrup for taste,I am still working with those two sweeteners Dorie

Do you guys peel the eggplant? I'm making this tomorrow--and I'm sorry if it seems like I need my hand held through this process--I CAN cook, but I'm not too familiar with eggplant!!
Yes, I meant length-wise, like sheets of eggplant paper.
I suppose you could peel it first, but I left the skin on and it still turned out just fine. I could use the extra fiber.
I'm so glad you guys like it! That was my first recipe invention. I love the recipes on here and I'm so glad there is a whole forum of other people who spend the day longing for a candy bar or even a lollipop.

I did peel mine, I needed too, if it is cooked a little longer, it kind of puffs a little, Yummy, Does anyone have a great Maple syrup recipe.I kind of combined two different ones... Dorie

Hey gals! I've got two huge organic eggplants to work with here--and no, I won't be eating them both tonight--they were on sale so i couldn't resist!! I can't wait to try it!!

One thing for anyoen else who tried it--I didn't cut my first batch thin enough--and that's important--the second batch were right on the money though!! YUM!
For anyone who's allergic to nightshades, I imagine zucchini would work as well!! Enjoy!
This reminds me of my Dad cooking growing up. He would get a zucchini from the garden slice it into circles dip them in a mixture of egg & salt then fry them YUMMMY! You will have to try this one.

I know everyone posted on this recipe back in Sept. I am new to this forum also, this past month, and not only wanted to say Hello!...but wanted to give this recipe one more thumbs up! It's awesome and tastey! Breakfast has been probably my most difficult meal to come up with ideas for (without eating the cereals, grains, and bread and still have it taste "breakfasty") and even without ever having eaten or made eggplant before- this recipe just hit the spot! Thanks for the great idea- this will be one of my regulars!
HI nefirr--it would DEFINITELY feed the candida--in fact they'd have a huge old party in your tumtum!!
If you can find veggie gly. it's a great alternative. i think frontier natural flaovorings has a maple flavor you can add to it as a substitute...I've heard it's good!!!
The vegetable glycerin mixed with a little dash of stevia, a sprinkle of cinnamon and a couple drops of maple flavoring IS A WINNER!!! It has made all the difference in the french toast, pancake, waffle category!!! I highly recommend it.

I loved this made a few changes. 1. only cinnamon for spice 2. Used a shot of maple flavoring made w/ veg. glycerin no stevia. I was shocked how much I liked this.
YUMMY!! I hated eggplant growing up but my mom sure didn't make it like this!! Melanie - you must be so creative! How did you ever come up with this?!!! I used liquid stevia (english toffee flavor) in the veg. glycerin and cooked the eggplant in coconut oil! Tried it this morning to test and will make it for the family this weekend!! THANK YOU!!! (definitely slice thin!!) First time I've really eaten veg. glycerin - so very sweet - how is it legit for us???!!!
I am joining my voice to the ones of the people who have already written: this is really very very good!
I did not use Stevia and it still tasted sweet, thanks to the cinnamon. I used one egg instead of two and used about 1/3 of an eggplant: this made 12 slices. I agree with Ashley: they do have to be very thin for this to work. Also, they cook very fast.
I prepared quite a few of them for breakfast this morning, before going for a one-hour run. I did not get hungry at all till lunchtime, 12 slices got me through the whole morning. This does not usually happen, this breakfast is magical!!
