I was wanting to make a quick treat lastnight and am trying to stay away from all the extra avocados so I ended up pureeing raw zucchini, mixing in coconut oil and sweetener and cocoa and then freezing it till soft and creamy- it made a yummy chocolate sorbet sort of treat that the children and I loved (after being at the fair all day and eyeing all the fabulous junkfood!)

That's so inventive!! Well done!! Yeah, I'm laying off those avocados too--I gain a pound every time I look at them!! Big Grin

sorry, I dont measure anything! I like to experiment and just add enough of each until I'm satisfied Smile
Just puree the amount of zucchini you want to use, add enough coconut oil so that it will become the texture you want and add sweetener until it tastes good to you. then add cocoa.
the more coconut oil you add, the harder it will be in a cooled state. Or if you are semi-freezing, you might want to add more coconut oil to make it solidify more (without having to freeze it)....just experiment and see what you like best Smile
