I got this recipe out of "Going Against The Grain" by Melissa Diane Smith. I could have also put them in the sweet treats section.

2 cups raw almonds (or other nuts) ground
1 cup rice protien powder (or any tolerated protein powder)
1/2 cup flaxseed meal
1/2 cup sulfite-free macaroon style coconut or ground coconut.
1/4 to 1/2 tsp. white stevia powder (I think 1/2 tsp is too much)
1/4 tsp unrefined sea salt
2/3 cup melted and cooled coconut butter
1/2 cup almond butter (or other nut butter)
1 TBS flavor extract (almond or other)

Mix dry ingredients. Mix wet ingredients and combine with dry. Line cookie sheet with parchment paper then spread mixture on cookie sheet. It will not fill the whole sheet, just shape into any thickness you want and create your own edges. Refrigerate a few hours than cut into squares.

These are really good. I froze most of the batch.

Wow! This looks really great. I am going to make this for my sweet-tooth husband (with a little for me, of course). I suspect we'll need to freeze a bunch of it so we don't eat it all up!

What a great idea to make protein bars! I've made protein shakes, but have always been disappointed that there is not a single protein bar on the market that we can have. I can't wait to give these a try!! THanks for the recipe!

I just made these this weekend and really enjoyed them - in fact, had to freeze the rest to keep away from them. I have one question, though. Mine came out a little soft, like they sort of melt at room temperature. Did you get that? What would you add to make them firmer?

I made them - they are yummy, but I had a bit of a problem too-- they are kind of crumbly-- more like a cereal than a bar. Don't know how to get them to stick together better.

Mary,
I noticed that they do need to be refrigerated. I froze them then when I want to eat on I set it on the counter for two minutes and that is all it takes.

Ahab,
I am not sure why your bars are crumbly. Perhaps the nuts weren't ground fine enough. The batch I made formed and were cut into bars easily. Sorry I can't be of more help as I have only made them once, I am going to make them again today so if I think of any tips I will let you know.

I actually used pre-ground almond meal (from trader joe's) so I don't think that was the problem. Maybe I'll try more of the butter next time.

Were they soft when they came out of the refrigerator? My batch came out hard they were just soft at room temp.

Ahab,
I think I might know. The recipe in the book called for "2 cups almonds - ground", as opposed to 2 cups almond meal. There might be a measurement difference if you are measuring preground almonds. Hope it helps Smile

Hi Betsy,

They are hard when they come out of the freezer or refrigerator - they just soften up a lot if they sit out. And I used the full amount of almonds before grinding, so it was more when ground.

this recipe has been a godsend. I've been using it in place of 'quick' snacks like granola or crackers used to be for me. It seems to keep without refrigeration (at least with the moisture level in the ingredients I had), so I keep a container of it in my car and snack on it a couple of times a day. I've made them with other nuts and other flavorings- hazelnuts and hazelnut extract is heavenly (assuming they're allowed on the diet of course, I didn't check). I'm going to try adding cocoa to the hazelnut one and see if I can get a Nutella-flavored snack out of that combo.

very high fat, I suspect, though.

I didn't like using the salt in it- it made the weird stevia flavor more noticable somehow.

I'm with you maria--I absolutely LOVE this recipe and wouldn't be without it. I only started making these two weeks ago but I just can't believe how good they are and they freeze well and everything!!! Great on the go or for breakfast!! bounceblue
