Here is my latest recipe. I think it is better than the Lemon Quinoa Cookies. I still used a little lemon juice since I think it helps to make them fluffy. If anyone has any suggestions on my recipes please let me know. Thanks.
QUINOA SPICE COOKIES 2 C. *Quinoa flour 2/3 cup flax gel (see below) 1/2 cup vegetable glycerine 1/2 tsp vit C crystals 1/2 tsp salt 4 TBSP melted ghee 2 tsp vanilla 1/4 cup fresh lemon juice 1 tsp baking soda 1/2 tsp nutmeg 1/2 tsp cloves 2 tsp cinnamon Preheat oven to 350. Mix and drop on cookie sheet. Bake for 6 minutes. *How to make flax gel Tarilee gave instructions and I put them under the Lemon Quinoa Cookie recipe. It was too think for me to strain so here is the recipe that worked for me. Bring 1 1/2 cups water to boil. Add 1/4 cup whole flax seeds. Simmer for 10 minutes. Strain immediately. I have a question. This is the second recipe that calls for flax gel and vit c crystals. I am assuming the flax gel is a sub for eggs? Is that right? Also, what purpose does the vit c crystals serve? I found them in my health food store, but it was like $40 for a small container. Not exactly in my budget. I don't have a lot of food reactions, so I'm wondering if I can use something else?

The vit C crystals are to act with baking soda--if you don't want to use them i believe you can substitute both with baking powder--but I'd wait to see what some of our resident bakers have to say on the issue.
If you take vit C capsules, you can open one up and use the contents of it instead of buying a whole new bottle of something... |
