This is a recipe that someone at my health food co-op turned me on to and I just love it! Very creamy and satisfying. The original recipe is from Renee Loux who made it in the movie Go Further with Woody Harrelson. I will give you my version with her ingredients in parentheses.
2 cup Hass avacados. About 2 large or 3 small. 1/8-1/4 cup veggie glycerine depending on how much cocoa you use. (She used 1/2 cup + 2 Tbsp maple syrup) 1 Tbsp + 1 tsp Stevia/Chicolin (She used 2-4 Tbsp Sugar) 2 Tbsp coconut oil 1-2 tsp nonalcoholic vanilla extract 1 tsp apple cider vinegar (She used balsamic) 1/2 tsp Bragg Aminos (She used 1/2 tsp soy sauce) 1/4-1/2 cup cocoa powder (She used 1 cup) Directions: In a food processor, blend the avacodos, veggie glycerine, stevia, coconut butter, vanilla, vinegar, and Bragg Aminos. Add the cocoa powder, sifting it thru a metal strainer, to prevent lumps. Process till smooth and creamy. 1/2 cup made the moosse very rich, but 1/4 didn't seem like quite enough. Yield: 8 servings Serve a few dollops in a champagne glass with raspberries-Stage 2. (I made a cranberry sauce for stage 1 folks, which wasn't bad. 1 1/2 cup dried cranberries with 1 cup boiling water. Add 1/2 Tbsp Stevia/chicolin and 2 Tbsp Veggie Glycerine to taste.). Beautiful! Would like to try whipped coconut milk for whipped cream on top, but haven't ordered the good stuff yet. The way I like it best: I made black bean brownies and I cut about 6 little 1/2 inch squares and tossed those in the champagne glass too. Just like a fancy restaurant! Store leftover mousse tightly covered in freezer for up to a month. Great frozen! Let me know what you think! I like frosting the brownies with it too! This message has been edited. Oh yeah! I have some extra advocados, and I'm getting tired of guacamole! I can't WAIT to try this with the brownies!

I think I like this better with 1/2 cup cocoa. It's very rich. But with only 1/4 cup cocoa it's still kind of green! lol I still try to trick myself into thinking I'm rating "Normal" food. I can't even imaging eating avacados with anything but chocolate anymore!!

Hello,
I know this is an older post, but I was told I can not use Coca as it has caffeine. I am seeing many dessert posted with Cocoa as an ingredient. Is it a limit or a No? I would love to make this... would it work with Carob at all? -A |

Amarillis- you can buy decaffinated cocoa. If you do a search here you'll find all sorts of info about cocoa (including lots of information about wondercocoa)- hopefully you'll find one that works for you!

OH MY GOSH!!!!!!
THIS IS SUCH AN AMAZING RECIPE!!!! I can't believe that we are 'allowed' to eat this- for sure the best thing I have had since starting this diet! For the record- I omitted the cider vinegar and braggs, and added a pinch of sea salt. I also increased the coconut oil a bit. After my children and I ate the whole rich bowl, I saw that the recipe says 'yields 8 servings'- oops! thanks so much for this recipe- I'm going to surprise my husband with it for Valentines day (without telling him the ingredients!). |

So glad you liked it. I think the serving size is about a tablespoon each, which I disregarded also.
It's really a great treat isn't it! You really should try it with the brownies and a few raspberries (or just for hubby). It was so elegant. I think I should make it for my darling husband for Valentines day too. Which reminds me of a subject I've been meaning to post. February is a good month for it. You'll recognize it when you see it. I would love to try it with the brownies. I've been wondering what to do for my kids' birthdays and now I'm thinking Tia's chocolate cake recipe turned into cupcakes with this mousse spread on top or on the side- something to really fancy it up. I'll have to try the brownies first. |

I made this tonight with 1/2 c. cocoa and it was soooo good and very rich! Even my husband thought it was good and that's saying something.
I think tomorrow I'll have to make the brownies or cupcakes, like Sara mentioned, to have these with. They've been cheap and so I went a little crazy... Sarah |

yup, I stocked up on avocados too! I pureed some and froze them in cubes so that I can throw them into my children's smoothies later.
speaking of smoothies, I made one today based on this mousse recipe: avocado, tahinni, water, stevia, cocoa, and a touch of cinnamon- i swear it tasted like a chocolate milk shake! I always heard of sweet recipes with avocado but they never interested me since I like so many savory avocado things....now I am a huge fan of both! Yay for Avocado! |

What flavor does the tahini add to the shake?
I'm scared of it in sweet things. I tried to make the cookies on this site that have tahini and carob and I had to spit the bite out that I tried and throw them away! Sarah |

I found it didnt change the flavor so muc has add to the consistency (and fat which I am always trying to add to our diets- especially my children's). I did have to use quite a bit of stevia though- which maybe isnt too great of an idea?

Hmmm...interesting. And I never thought about freezing avocado puree. Great idea! By the way, I finally was able to buy a spaghetti squash yesterday and was wondering if you had time to post the pudding and flan recipe. Especially the flan! I don't have any agar agar so I could only make the pudding with cornstarch to thicken it, I think. I've never really made a flan and I'm not sure what type of pan you put it in (I don't have an actual flan pan)--would a pie pan work or should I use custard cups or something else?

ha, I dont have a flan pan either...not sure what that would look like. My first one I put into a small square baking dish which was fine but now I make them in individual custard dishes, which is really nice. I'll post the recipe right away!

MMMM... GayAnn I made this last night with Carob powder and it is AMAZING. I can only imagine how delish it would be with the cocoa. It looks like chocolate and tastes great! What a wonderful creation you have here. Thank you so much.

Always thrilled to hear someone else loves this too. I can't imagine eating avacados with anything but chocolate now! I didn't create it though! Just typed it in and changed a few ingredients. I'm not a good cook. But I'm getting there. You all are boosting my confidence! Gay |
