Spelt sounds very appealing, but I'm avoiding it since it has gluten. I'm still unsure as to why gluten isn't recommended in the first stages of this diet. I've searched around but still am confused. Can anyone lead me in the right direction? I'm pretty much allergy-free, never any problems.

Hey Spectra! I know a lot of people have problems digesting gluten and become sensitive to it--For some reason we lucky candida sufferers have this to contend with too!! That said, I don't seem to have any trouble with it--and I have trouble with almost everything!! You may want to try it and see if you have any reaction to it--the best way to do this would be to use a health diary--and really keep a close eye on it...In any case good luck!!

Hi Ashley dear!

So regardless of the diet recommendations, you would recommend trying it out at least? Roll Eyes I'm trying to get *anyone* to tell me that I can have some kind of bread!

I have the Pacific Bakery Kamut and Spelt breads in my freezer (sent thousands of miles across oceans to get to me, courtesy of my lovely mama!), and I'm feeling guilty eating it because spelt and kamut are on the Stage 3 list. But I'm still pretty certain that my condition is not so bad...so I should be able to eat them.

The only food allergy I've ever experienced was egg allergy (eaten whole-cooked or scrambled or fried), but yesterday, after over a month on this diet and off the pill, I had one whole cooked egg with NO reaction!!!!!!!!!!!!!!!!! Yipeee!!!!!! So *something's* going right!

That's so terrific Spectra!! I had this once before, about 6 years ago, and the candida had not gotten out of control yet. So when I went on an anti-candida diet then I still ate a lot of carbs and recovered quite well (though not all the way which is how I ended up back here--that, and I started eating "normally" again). My point being everyone's different and what you may be able to handle I certainly wouldn't be--If you feel you can handle more carbs then I might go for it (but with a very watchful eye of course!!)...Just remember with this loaf that 1 slice is one limit serving--they add up very quickly I assure you! Smile I hope whatever you do that you continue to get well--Where are you living by the way?

I made this last night and it's good. Oh, it doesn't compare to my standby recipe with the crumbly brown sugar/butter/pecan topping, but I'll live. It was wonderful to have a slice of pumpkin bread!

I change every recipe I ever use, so in this one, I used oil in place of ghee (same quantity) to lower the cholesterol. I didn't use nuts. And after reading Jan's comment about the brown rice flour, I used 3/4 c brown rice flour and 1/2 c tapioca flour. The bread is pretty delicate but it's holding together fine, with careful handling. Good stuff. Thanks!

I made cookies out of this recipe today and they're great. I used amaranth flour and baked them at 325 for about 20 minutes. Any higher and the bottoms got brown before the cookies set.

Is this recipe high in carbs though? I'm only on my 6th day of the Candida diet and we haven't eaten anything that has yeast, sugar, or even any carbs (BARELY)..

I am feening for sweets / snack so that would be awesome if this was eatable for someone in my stage.

Hi again,

I'm not sure about this recipe, but there is a recipe called sweet courgette muffins made with chickpea flour that are very low carb. I loved them. I don't think they're a limit food.

Have you checked out the diet recommendations and the "limit" foods? This site recommends one "limit" per day. It might satisfy your cravings. Tia's Delicious brownies are also good. Made with ground sunflower seeds so very low glycemic. You can search these recipes.

Yes, I found the diet recommendations very helpful. Confusing at first, since I was a real junk food junky, but really, really helpful. I printed out the lists and they were like my bible for months. And reading old posts and recipes were so helpful too, to get an idea how others coped with this big lifestyle change. Ok, I'm really signing off now.

I'm sorry I'm not so good at pasting links, cuz I'm OLD and still learning this internet stuff. Confused But if you scroll up, you'll see the top line says "home what is candida? candida diet order products". Click on those and you'll find a wealth of information.

I use the "purge", as you'll see mentioned in many posts, and I purchase it here, to help support this great forum. I purchased the whole phase 1 "bundle" with Collette Lahoz's book, which was very helpful. I have been battling this for years, but this is the first time I've had continued success. For me, the diet, the purge and the forum, have made this a very successful journey. I feel better than I have in years.

It is a process, though, and it takes time to learn, and have your body acclimate to a new way of living. Besides the recipes, the one thing I learned here, that made such a difference, was that the yeast "mutates" and becomes resistent to the anti-fungals that you're taking. So you have to switch, which is why there are different phase products.

As you roam around this site, you will glean lots of information. It's alot to take in, and seems overwhelming, but any change you make will help. Of course, if you're like many of us, when you see a ray of hope, you just want to plow right through it.

Gotta get to work. Tarilee, our moderator comes on today. She doesn't usually look at recipes, so if you have questions for her, post them under the other headings, like you did before.

Just think, you're one day closer to a new life!! I hope you start feeling better soon!

Yeah you're REALLY old Gayann!!! Eek Big Grin Wink Don't you remember that you're 30 and I'm 18?!

I just wanted to say also that weirdtoes has posted some recipes that are terrific for stage one diet. If you do a search under her name they should pop up for you--let me know if you have any trouble ok? This recipe would be a treat (It's delicious btw!) because it IS higher in sugar than what is normally recommended initially.
