1 large egg
1 tsp stevia
1 tsp baking powder
1/2 tsp vanilla
1 cup almond butter
1 tsp water
1/3 cup chopped almonds (optional)

Preheat oven to 350.

In a mixing bowl beat the egg, stevia, baking powder and vanilla for about a minute. Add almond butter and water and beat together.
Measure out a heaping teaspoon of batter and roll it in the chopped almonds.

Place cookies on a lightly oiled cookie sheet and bake for 15 minutes or slightly longer until cookies are firm are are slightly browned.

I just made these today but have not tried them yet...they look pretty though and I think they'll be good.

You can also use hazelnut butter as well. Smile


TLC: As long as your digestion is strong and you don't eat nuts so often or have an intolerance to them, this should make an amazing treat once in a while. Keep in mind that almond butter is ground almonds and non sprouted, pasteurized almonds (the most commonly available) have a digestion inhibiting coating on them so they can be challenging for compromised digestion.

Yum! Can't wait to try this one. I have almond/hazelnut butter that would be so tasty too.

Seriously, the recipes on here are just amazing!

uh oH! THese might be trouble!!! i just made them with hazelnut butter and some chopped hazelnuts to top. Didn't yield too many cookies... I added a little hemp milk and salt. Substituted ginger for the vanilla as I still don't have any alcohol free! Gotta get on that. I might add a bit more stevia next time.....thanks!!! such a great snack!

These are so wonderful.

I added almond extract to the batch I made tonight and they came out like a "sandy" (crumbly) version of amaretto cookies.

Yumm ! These are really good ! I am going to eat them for breakfast this week ! Twenty minutes tops to prepare and cook and they are awesome ! So great !

These are a personal favorite of mine. I have trouble eating just a few of them. I have to freeze them to limit myself so I don't eat like 10 at a time. Smile

I love this recipe because it's simple and quick. I like it a little sweeter so the second time I made them I doubled all of the ingredients. I'm not sure if it was the two eggs or the baking soda instead of baking powder (I'm a cookie newbie) but they came out more like muffin tops instead of cookies which was quite tasty. I also added yacon syrup and toffee flavored stevia.

The stevia I got is from Sweet Leaf. I bought it from Mother's Market but they also sell them @ Whole Foods but they're almost $5 more than the iherb site.
