ingredients:
3 egg whites 1/2 teaspoon vanilla flavour 1 1/2 cups dried, unsweetened, fine shredded coconut 1/4 teaspoon sea salt 1 teaspoon stevia powder 1/2 teaspoon cinnamon (optional) preheat oven to 325F whip egg whites and vanilla until glossy peaks form. in a seperate bowl, mix the other ingredients. gently fold the dry ingredients into the wet , until just combined. let sit for about 5 minutes. using about 1-2 teaspoons of batter per cookie, place cookies on unbleached parchment paper lined cookie sheet. bake until the outside of the cookies are browned, about 10-15 minutes. let cool on the baking sheet, and store in an airtight container. makes about 20 cookies. ~these are so yummy! hi sarah,
that's neat that your sister is also a johanna, it's so rare! for the macaroons, i find that they are a little crumbly if baked for a bit too long. i also press the mixture into a baking teaspoon to form the macaroons (maybe the pressure helps)? i'm glad that you liked them! |

what brand of vanilla flavour do you use? all the vanilla essence in the supermarket contain fructose or glucose, so im not sure im looking for the right thing. is it mock vanilla?

Sugar definitely helps beaten egg whites hold together. Cream of tartar (found in baking powder, made from fermented grapes or something), cornstarch, and white vinegars also help but they're all on the forbidden list, however you only need to use a little to make them work.

I just made these and added a tablespoon and a half of tapioca flour, and they held together really well! These are quick, easy and yummy.

These are good. I put just a little xantham gum in them to help them stick together. I'm not sure if this is an OK ingredient but they didn't give me any reaction. I sprinkled a little over the batter. I went ahead and rolled them into little balls and then cooked them till they browned a little. I put most into the freezer and pull them out for little snacks. It's hard to find snacks that feel OK. Homemade is better. Even packaged brown rice cakes and rice crackers make me hurt. These are a much better solution.
Before I got sick, I made these with almond flavoring. If I find an almond flavoring that's OK on this diet, it would be a great addition. I am used to the ones I used to make that were sticky, gooey and buttery ones but this diet safe recipe fits the bill when I feel so much better. |

DELICIOUS!
I was craving something last night and whipped these up in minutes. So easy! I used a little less than 1 tsp of stevia/chicolin. And used Lisa B's suggestion for adding 1 & 1/2 Tbsp of Tapioca flour. I took a couple of spoonfuls of my frozen Chocolate Mousse out of the freezer, (GayAnn's recipe) and by the time the cookies were done I had some chocolate to smear on top of the macaroons. It was delish! |

So glad to hear that chocolate mousse recipe is still making the rounds. I've gotta make these. I'm craving treats and have to make some that I can eat. Working too many hours is my downfall . . . .
