these turned out great! You'll need a dehydrator to make them.

1 cup sunflower seeds (soaked, dehydrated and ground)
1 cup golden flax seeds (ground)
4 drops peppermint essential oil
1 and 1/2 teaspoon stevia (I used liquid stevia clear- my favorite)
2 Tablespoons cocoa
2 Tablespoons veggie glycerin
2/3 teaspoon cinnamon
1 t vanilla (could have used a bit more)
1/4 sea salt

process til smooth. spread on teflex sheets (I did half on a sheet and half in cute heart shaped molds for Valentine's cookies)- dehydrate til done. I took some out while they were still chewey and left some in longer: both were great!

i might just use my oven and hope for the best b/c these sound good!

anndd i just ordered mint flavoring from frontier.

it would work in the oven too I'm sure. I use a similiar version (with out the cocoa and mint) and fry up littl circles in coconut oil- it's yummy! I think with the right flavor, you can't go wrong (I've even been known to eat the batter raw)

ahh once my mint flavor gets here ITS ON!!

and im dying to make some version of avocado ice cream work without an ice cream maker.

and im thinking of trying to make avocado fudge, ill post a recipe if i succeed.

yum, fudge and ice cream sound great! The chocolate mousse recipe is great semi-frozen. Please share any recipes you come up with!

I can barely recreate recipes, so it will be interesting when i start making my own.

but fudge seems doable. and delicious!

These cookies sound like a real treat!! do you grind the flax seeds before measuring them?

So glad you all like the avacado mousse. The recipe sat here without a lot of action for the longest time. Since I'm not a confident cook I was starting to get a complex!! LOL It's a nice treat and I'm glad you like it.

We really can live well without all the junk!

How well I know! I've been at a seminar for 5 days and by the end I did succumb to a piece of chocolate cake! How could I, after all this work at getting well. I was such a fool. My stomach has been hurting for a week!! Now I'm trying to be extra strict. It was not worth it!!

Gay! Your back! I've missed seeing you here- it just hasnt been the same without you!

I'm sorry you've been hurting for a week- It is good to know that the cake was not worth it- I'll keep it in mind when I am tempted! The good thing is that it is easier to get back on track once you've been healing for so long- right? What is the saying here? Nothing tastes as good as healthy feels?

Ahhh, you're so nice! Always nice to know you're missed!

Yes, it is easier to get on track. In the old days I would have kept on eating junk til Kingdom Come!

I did very well today. Hummus with that good flatbread recipe my husband made for me. I passed on the pasta dish he got at Costco and had just plain meat and veggies. I find if I do cheat, which I never did in the beginning by the way, if I get back to the phase 1 stage diet, I feel better quickly.

An occasional treat doesn't phase me too much now, but it's usually just a bite. And who wants it after the good food we can make with these recipes!

You seem very creative in that department. What a good mom you are to get your kids eating right so young! Big Grin My 14 yr old does not groove on this geeky health food. Or much of anything I like for that matter! But that's another post!!

thanks! I try to be a good mom- but I feel guilty because I am spending so much dang time in the kitchen instead of playing as much as I should be...*sigh* There just isnt enough time in the day...especially when I keep coming back to the darn computer to see whats going on in cyber-candida world, lol

It is nice to know that in the future I will be able to *cheat* and recover. I have not had a real cheat yet but I look forward to an occasional night out...some day.
