Here's a recipe that I came up with.


(Caution re the craving or allergic potential of *coconut and of *chocolate)

1 stick unsalted ghee
3 eggs (do not substitute)
1/2 cup *coconut milk (do not use lite)
3 tsp. stevia/chicolin
1 tsp. vanilla(frontier)

mix this in one bowel, now in another bowel
add:
1/2 tsp. salt
3 heaping Tbsp. organic cocoa powder
1/2 tsp. baking powder
1/2 tsp. baking soda
2 cups ground flax

Mix the dry into the wet ingredients and let
rest 5 minutes. Now add 1/3 cup of water to
loosen up the batter, this step is really
important so the muffins will be moist.
Pour into a well greased muffin pan,
bake at 350 degrees for about 18 minutes.
Keep a close eye on these, use a wooden
toothpick to check for doneness, as soon as
the toothpick comes out clean without wet
batter clinging to it. Remove pan from
oven and enjoy.

I also discovered something really tastey
when I created this recipe. You can make
ice cream sandwiches with these, you need
to omit the water(this will create a drier
muffin) bake the same way, then when they
are completely cool slice them in half
and add Tia's butter cream frosting ( make
sure the frosting has cooled off and set
up in the refrigerator before adding to the
center of the sliced in half muffin, cap
with the top of muffin and wrap in plastic
and freeze. Remove muffin from freezer
and let sit about fifteen minutes before
eating. Yummmmm!

Another idea is to use *Rice Dreams mint
chocolate chip frozen dessert for the
center of the ice cream sandwich.I love
this soooo much, it's worth having this as
my limit for the day.

Hi blondie,
You can do a search on the internet for the
Wondercocoa or call your local health food
stores to see if they carry Wondercocoa. As
far as replacing the ghee in the chocolate
flax muffins you can use a 1/2 cup canola or
sunflower oil. These muffins are very high in
fiber as well as being really tastey. Remember
to add the extra 1/3 cup of water as stated
above and please do not overbake these, they
really do come out very moist.

Hi blondie,
I don't know if replacing the coconut milk with
other milks would work. This recipe is very
simple and for it to be successful I believe
that replacing the coconut milk would alter
the texture. You could go ahead and try and
let us know how things go.

Hi Blondie,
One stick of butter is half a cup or 1/4 of a pound. You need
to melt one stick of butter and remove the milk solids(this will
make ghee) before adding it to the other ingredients.

I'm not positive of the ingeredients of the flax muffins. Check them out with the list of ok and limit foods on the food list. That's one way to figure it out.

Have you tried sprinkling the ground flax seed on your salads? I did that this evening..I've got a 'case of gas' also, and hopefully it will kick in by morning! bounceflames2

Have you found the recipe on Ashley's 'movement' soup? Sandi swears by it. I'll ask Sandi if she's time to bring it up to the top for you.

I know it has cabbage in it. Which is something you might try..some steamed cabbage. With some clarified butter or olive oil, and seasonings. I like it actually.

Hope you get yoyurself cleaned out soon. Yes Constipation is not fun! No

Another thought..you may want to put a little extra physlium in your 'purge'.

It is called Smooth Move Soup and I think that coconut milk is a limit food, but don't quote me on that one.

You can find the soup by using the search function under the FIND tab at the top of each section. I will try to find it and bring it to the top for you, it really works, just be sure not to overcook it and stay close to a bathroom...I had to eat about 3 bowls, but it finally worked. I also cut back on the psyllium for awhile, until you get things moving again. Winky

THANK YOU RHEMA!!!
This recipe is going to save my life!
I just made the muffins, but i don't have chicolin, so i guessed at how much stevia, and it could have used a little more i think, and i think the flax could have been ground a bit more, but holy cow, just being able to bite into a MUFFIN is bringing me close to tears!

Where is the muffin recipe? is it the one above? Can we use something other then flax? I'd really appreciate anyones advice, I need help making things my daughter will take to school for breakfast..
