I was surprised to find that there isn't a recipe for this yet.
Ingredients 4 cups water 1 cup *coconut milk (or 2 for more creamy) 1 cup small pearl tapioca (use less for a more creamy consistency, I like mine bumpy) 3/4 TSP salt 1 egg or substitute 2 TSP vanilla extract 2 TSP cinnamon (optional) 3 TSP stevia (or more if you desire) 4 TBL *vegetable glycerine Method Heat water and milk over high heat in saucepan until it starts to boil. Lower heat to low medium, then add tapoica. Blend all ingredients except vegetable glyercine and throw in saucepan. Cook for about 5 minutes or until tapioca *starts* to look clear (but don't cook too long), stirring frequently. Add vegetable glycerine and cook an additional 3 minutes or until tapioca pearls are fairly soft. Poor into bowl and let cool in fridge for at least a few hours. Don't worry that it's watery at first. It will get thicker as it cools. I add more cinnamon afterwards (can you tell I like it)? Yields about 4 servings Let me know how it goes!
