this is a perfect summer treat that satisfied my ice cream + popsicle craving. It's adapted from Ani Pho's "Raw Food Desserts".

2 cups brazil nuts (soaked overnight)TLC recommends real raw macadamia nuts soaked
1 cup lime juice
~1/2 cup yacon syrup
1/2 cup coconut oil (liquid)
1 cup water, as needed

Combine the nuts, lime juice, yacon syrup, and coconut oil in a high-speed blender (food processor) and blend until smooth, adding water as needed. Scoop the mixture into a pie dish or pan, and freeze until chilled (2-3 hrs). Cut into bars to serve.

To make this even more delicious, try dipping the bars in chocolate sauce! I've been eating small pieces on a toothpick, and making mini popsicles.

The chocolate sauce I used was from the "snowball cupcakes" recipe in this site, and it hardens on contact with the cold bars to make a crunchy shell- perfect!

I don't think I can use the Yucon syrop yet... what else can be used in it's place? Glycerine?

Hey Amarillis, The Yacon Syrup is an OK food for stage one so it should be fine to try. In fact, it's made every sweet thing much yummier! It's just a little expensive... but they sell it here on this site.

Hi everyone....does anyone know what liquid coconut oil is? And has anyone tried this w/ a different sweetener? I haven't bought yacon yet.

Oh yes, it sure does... I found mine in the cupboard looking like a jar of water. I leave it in the Fridge now to be on the safe side.
