hellooo.
So basically I took GayAnn's Avocado mousse and made it a bit thicker by playing w/ the avocado-carob powder ratio and just let it set. 1 avocado 1/2 stick butter or ghee 1/2 cup-1 cup carob powder/cocoa (i played around with it, adding a little at a time) 2 packets of stevia (again--play around) Blend a really ripe avocado in the food processor. Melt the butter/ghee on low heaT. Add the carob powder a little at a time until the lumps are gone. add to the food processer until blended and thick let it set in the fridge and viola! I dont have much experience w/ fudge and honestly never liked it but THIS i couldnt stop eating which is bad b/c its really high in fat. Still, I can tell this will be a staple in my baking world--you can use it as an icing, do the mousse recipe, or freeze it. you can also add nuts to it or whatever flavorings you like YUMMY. haha yes..i finally got a chance to make something.
Even tho i need to play with veggie dishes and not desserts! But i figured better to gorge on this fudge (which i did) than crack and have more coffee or fries. it came out really good! Even tho avocado whipped w/ butter and sugar was good and would make good icing. |

The avocado for icing is a good idea I hadnt thought of. I have some gelling in the fridg- I used agar flakes (agar is really fun to work with!) and didnt make the icing chocolate because I made chocolate hearts to go on top of the icing- fancy! I'll let you all know if the agar icing concoction works thanks for the fudge post- I'll have to wait to try it- I just weighed myself today and realized that all this coconut oil is doing more than helping me feel better, if you know what I mean |

ah that sucks!! Its not fair. you gain weight b/c of carbs or you gain weight b/c of oil!
i thought coconut oil was supposed to be GOOD for your metabolism? I use way too much olive/coconut oil...and i cant afford to gain more weight (i can never lose it b/c of candida..im assuming. |

I lost about 25 lbs effortlessly when I started the diet. Now I've leveled out and even gained 5 lbs back, after too many avacado shakes!!
Lots of people lose weight on this diet and wonder how to keep weight on! That's never been my problem. So don't think you won't lose it. It could happen. More important, we learn to eat in a healthy way. That will improve our immunity and our health in general, aside from the candida! Can't wait to try the fudge! Gay |

thats what i was hoping for..but so far i haven't lost any weight. I think i've actualy gained 3 pounds..between the nuts and the avocados.
That could be b/c im not as strict as i should be in phase 1 ( in fact i need to do a "start over") ill probably post another discussion on this later. |

yep, the coconut oil is good for metabolism and it keeps me feeling full- I dont know what the heck is going on.
One good thing is that when you gain weight the fat stores toxins, keeping them away from your organs- which is a good thing that I have to remind myself as slip into some more comfortable jeans, lol. When I started the diet, my size 8 jeans were my 'skinny jeans' that didnt always fit right (depending on the time of the month)- a few months ago I was down to a size 2! It was too thin for me and I had 0 energy. Now I am balancing out. Its nuts how many times I have changed sizes- I keep having to go shopping for clothes that fit and I've only been doing this for 6 months! nuts. |

p.s.- I forgot to mention that the agar flakes made my frosting have the most perfect consistency! I'm so stoked- it is snow white and perfect- of course my son was disappointed that it wasnt pink (MOM- you HAVE to have pink on your cupcakes for Valentines day!!!) so I was going to go to the store to buy a beet, cook it up and add a drop to color the frosting (I know beets are not on the diet but figured 1 drop of beet water wouldnt be the end of the world) but then talked him into adding some non-edible hearts to the decorations (cut from paper). Oh and my chocolate hearts I made for decorations are amazing! They look like I bought candies from the store! Yay!!!

wow! did u lose all that weight from being on the diet?
i think my wrist is a size 2.. I was a steady 6 before all my symptoms kept flaring...then i was an 8...now im a 10 and it wont go down! and i hate it. Glad the frosting worked out! I still have to find some agar. If only valentines day made ME as happy as it does your son.. |

yup- all from the diet. I work out every day but was working out before the diet, so that wasnt it. Actually for a while I was working out less but dropping huge amounts of weight. Like I said though, I felt like crap- very weak. I looked like a skeleton and since I am 5'11, that is not a good thing. For the first time in my life the impossible happened: I thought I was too skinny!
*Valentine's was never a big deal to me, but now that I am a Mommy, it is HUGE! |

well glad that you've gotten things to 'stabilize'.
one of the things that really brought me to the whole candida conclusion was the weight and stomach issue combo. I just am worried ill keep gaining. and lately ive just been doing major carb overload. I cant really work out very well due to a knee injury (had to quit this year year). Right now all i can really do is ride a bike and not for very long either! so my heart rate barely goes up. it just seems like i cant win lately. well...happy valentines day. |

bummer on the injury- that must be rough. I get really depressed when I don't work out. I wouldnt worry about gaining weight- I mean, really- look at all the foods we are *not* eating! I believe that if we are eating this healthy and gain a bit of weight it is because our bodies need it to get healthy...at least that is what I keep telling myself!

hmm..i said that but ive been slowly gaining weight for way too long (probably b/c i have 5 years worth of waste and toxins wreaking havoc?!)
but...yea. I dunno. I hear u w/ the not working out thing. Im really bummed about not being able to row. its TOTAL pain most workouts but its worth it (i think a half hour burns like 2500-3000 calories. ) sigh. |

Awesome! I love avacados and this makes a great way to get your good fats. Even though it's fattening, it's VERY good fat.
